10 Minute Microwave Vanilla Cake
My 5 minute chocolate cake is already a huge hit at home. It is a quick, easy and no fail recipe. But there were times when instead of chocolate, we craved for a vanilla flavored cake that would be equally quick and easy. That is when I started playing around with ingredients. There were many fails before I finally found the perfect vanilla cake that can be easily made in the microwave.
If you think it’s too good to be true, then I challenge you to give it a try! It may become your obsession and a perfect dessert for those late-night sweet tooth cravings. Bonus points that you probably have all the ingredients in your pantry.
The steps are simple:
- Whisk the dry ingredients together.
- Whisk the wet ingredients together.
- Mix the dry and wet ingredients.
- Then microwave it.
Unlike my 5 minute chocolate cake, this cake needs to be microwaved for 10 minutes. Each microwave is different in strength so the very first time you make this recipe, stop at 8 minutes, check if is done by inserting a toothpick. If it comes out wet, add additional 1-2 minutes more. Stopping the microwave and opening its door, will not cause the cake to deflate, another bonus point!

10 Minute Microwave Vanilla Cake
Ingredients
- 1 1/2 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 cup oil
- 1 cup milk (room temperature)
- 1/2 cup yogurt
- 2 teaspoon vanilla essence
- 1 teaspoon vinegar
Instructions
- Prepare a 8×8 or 9×9 inch microwave safe dish. Brush the sides with oil and place a parchment paper at the bottom.
- In a large bowl, sift the dry ingredients—–all purpose flour, baking soda, baking flour, salt.
- Using a whisk, whisk the dry ingredients well and keep aside.
- In another bowl, add the remaining ingredients—- oil, milk, yogurt, vanilla essence, vinegar and sugar.
- Mix very well until all the sugar dissolves.
- Then add the wet ingredients to the dry ingredients and mix using a spatula. DO NOT OVERMIX.
- Pour the batter into the microwave safe dish. Give it a few taps on the counter to get rid of air bubbles.
- Now microwave it at high power (100%) for 10 minutes.
- Once done insert a toothpick in the center. If it comes out clean, it is done. If it comes out wet, give it 1-2 minutes more.
- Using oven mitts, carefully remove the dish (it will be very hot!) and allow it to cool completely before cutting into it.
