5-Minute Microwave Dessert

A dessert which takes 5 minutes only and that too in the microwave? Yes, it is possible!

We all have those days when we want something sweet to sink our teeth into but either don’t have enough time or ingredients to make something special. But don’t worry because this 5 minute dessert will become your new life saver!

Because it is in the microwave, you don’t have to worry about preheating an oven. It requires only a few key ingredients which you already have at home. You don’t need a stand mixer, so you won’t end up with a giant mess to clean up later (which is the best part!) Whenever my kids have a random last minute craving for something sweet, this has been my go-to recipe for years. 

Texture of this dessert is soft and spongy. You can refrigerate any leftovers. Even if you choose to refrigerate it for days on end, this dessert will still remain soft and fluffy.

I also guarantee you that this is even better than mug cakes! Typically, when people make mug cakes, they often find that the center of the cake is not fully cooked. However, this recipe ensures that the entire dessert cooks evenly all the way through.

Another bonus is that it is egg-free!

Ingredients
  

  • 1 ¼ cup all purpose flour
  • 4 tablespoons cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup sugar
  • ½ cup oil (vegetable or canola)
  • ½ cup buttermilk (See notes below: ½ cup warm milk + 1 teaspoon vinegar)
  • ½ cup hot water
  • ½ teaspoon vanilla essence

Instructions
 

  • Make sure your microwave is at full power.
  • Take a microwave safe dish and lightly grease it (this allows the parchment to stay in place). Add parchment paper and grease the parchment paper too.
  • Sift all the dry ingredients through a sieve in a large bowl – all purpose flour, cocoa powder, salt, baking soda- and break any large lumps if present.
  • Then add the sugar directly to the dry ingredients.
  • Using a WHISK, mix the dry ingredients very well.
  • In another bowl, put together the wet ingredients- oil, buttermilk, hot water and vanilla essence.
  • Again using a WHISK, mix the wet ingredients well.
  • Pour the wet ingredients into the dry ingredients.
  • Now using a SPATULA, slowly mix the batter and scrape the sides and bottom. Do not mix vigorously and do not overmix!
  • Pour the mixture into the prepared dish.
  • Place the dish in the microwave and set the timer for 5 minutes.
  • Once done, check for doneness by inserting a toothpick in the center. There should be a few crumbs on it.
  • Wearing oven mitts, very carefully remove the dish and let it cool completely.
  • To get nice neat cuts, refrigerate it for 30 minutes after it has cooled.
  • Any leftovers can be refrigerated.

Notes

  1. Buttermilk can easily be made at home- add vinegar to warm milk. Leave for 5 minutes and you will see it has curdled. Mix to break and distribute the curds. Buttermilk is so much better than using milk. It gives a spongy and soft texture. There will be no vinegar taste.
  2. You must sift all the dry ingredients. This breaks any lumps in the flour and cocoa powder and introduces air into the dry ingredients.
  3. A few crumbs on the toothpick indicates it is done. But if the toothpick comes out very wet, give 1 minute more only in the microwave.
  4. To get nice neat cuts, refrigerate it for 30 minutes.
