Shahi Tukray

Shahi Tukray is a simple dessert that looks, feels and tastes fancy. It is a dessert which is especially prepared on festive occasions since it gives royal vibes! The word shahi tukray translates as “royal pieces” (shahi=royal, tukray=pieces).

This is a fuss-free, no-bake bread and milk dessert which takes only 15 minutes to make. It is made with simple ingredients you probably have in your pantry or easily available from your nearby store.

 It a great recipe to put together if you have some bread lying around that needs to be used up quickly. The bread slices are cut in triangular pieces (which is iconic for this dish); but feel free to cut it into your desired shape- squares or rectangles. The pieces are fried until crispy and then soaked in a sweetened fragrant thickened milk mixture.

It can be eaten warm but tastes divine if allowed to cool for at least 2 hours. This allows time for the bread to soak up the milk mixture giving the bread afluffy and creamy texture. It tastes even better the next day! Just make sure to refrigerate and not leave it out at room temperature. No need to reheat it. This dessert is good for 2-3 days; after that the bread becomes too soggy.

You can top it with:

  1. Roughly chopped pistachios or any nuts of your choice
  2. Whipped cream
  3. Vanilla ice-cream
  4. Leftover sweetened milk mixture

Ingredients
  

  • 2 cups milk
  • 1 can evaporated milk
  • 3/4 – 1 can condensed milk
  • 1/4 teaspoon cardamom powder
  • 10 slices white bread
  • Oil (as nneded for frying)
  • crushed pistachios or almonds (garnishing)

Instructions
 

  • In a saucepan on medium heat, add all the 3 milks and let it come to boil.
  • Reduce the heat and let it simmer for 15 minutes. It will slightly reduce and thicken.
  • Meanwhile, cut up the bread slices- either triangular or rectangular.
  • In a frying pan on medium heat, heat up the oil and shallow fry the bread slices until they turn brown and crispy (don't burn them).
  • Keep placing them on tissue to absorb any excess oil.

Arrangement:

  • In a wide dish, arrange the bread slices and pour the milk over it. Make sure that every slice is soaked. Reserve any left over milk to serve it along with the shahi tukray.
  • Garnish with crushed pistachios.
  • Refrigerate for at least 1 hour and enjoy.

Notes

  1. Start with 3/4 can of condensed milk, taste and add more if needed.
  2. Place fried bread slices on tissue to absorb excess oil.
  3. Make sure all slices are soaking in the milk. This will soften and given flavor to them.
  4. The recipe can be doubled or halved.
