Saucy Sausages
Are you bored of eating sausages? Or probably you are not a sausages fan? Then this saucy sausages recipe is for you which is inspired by a Persian street food. This has become such a hit in our home that it is the only way I make it. You can cook it quickly on the stovetop in one skillet, and it is loaded with peppers, onions, and mushrooms.
Pro-Tips:
1. It is best to cut the sausages diagonally rather than circular. This increases the surface area to give the slices a nice sear.
2. Sautéing the sausage slices gives a depth of flavor, a more barbeque taste.
3. This recipe uses a lot of onions. Caramelizing the onions brings out their sweetness to perfectly balance the meaty flavor.
4. Adding vegetables is optional but I love adding them. It adds volume to the dish and nutritional value too. I usually add green bell peppers and mushrooms, but you can add carrots and cabbage too.
Uses of Saucy Sausages:
There are so many ways to use this sausage mixture. Here are some ideas but the possibilities are endless:
- Place it in a hamburger or hot dog buns to make juicy sandwiches.
- Add it to your pizza to make a unique pizza topping.
- Mix it in your pasta.
- Add it to your rice or quinoa.
- Add it to salads.
This sausage mixture can be made in advance. Once cooled, you can transfer to an airtight container and refrigerate until you are ready use it. You can refrigerate it for 1 week.

Saucy Sausages
Ingredients
- 450 gm sausages
- 5 tablespoons oil
- 3 large onions thinly sliced
- 1 large bell pepper thinly sliced
- 300-400 gm mushrooms thinly sliced
- 2 teaspoon ginger-garlic paste
- 2 tablespoons tomato paste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper powder
- 2 tablespoons soya sauce
- 1/2- 3/4 cup water
Instructions
- Slice the sausages diagonally (see the picture above in the post). This results in larger pieces which crisps up better.
- In a large frying pan on medium-high heat, add 2 tablespoons of oil.
- Once heated, add the sausages and saute it until most of the pieces have developed a crisp look (stir continously or they may stick).
- Transfer to a bowl and set aside.
- In the same frying pan, add 3 tablespoons of oil and add the sliced onions.
- Fry the onions until they turn golden brown.
- At this point add the ginger-garlic paste, bell peppers and mushrooms and let it cook with the onions.
- Add 2-3 tablespoons of water and cover the pan. This will create steam which will soften the vegetables.
- After 1-2 minutes, give it a stir and now add the remaining ingredients- tomato paste, cumin powder, red chili flakes, salt, black pepper powder, soya sauce and 1/2 cup water.
- Cover and let it cook for 1 minute.
- The mixture should have a saucy look. If it has dried up, add the remaining 1/4 cup water.
- Add the sausages to this mixture and give it a good stir to coat them with the sauce. Cover and reduce the heat to medium and cook for 1 minute more.
- The juicy sausage mixture is ready.
- To assemble a sandwich, just add the sausage mixture. It is so moist and flavorful, you don’t even need mayo!
