Slice the sausages diagonally (see the picture above in the post). This results in larger pieces which crisps up better.
In a large frying pan on medium-high heat, add 2 tablespoons of oil.
Once heated, add the sausages and saute it until most of the pieces have developed a crisp look (stir continously or they may stick).
Transfer to a bowl and set aside.
In the same frying pan, add 3 tablespoons of oil and add the sliced onions.
Fry the onions until they turn golden brown.
At this point add the ginger-garlic paste, bell peppers and mushrooms and let it cook with the onions.
Add 2-3 tablespoons of water and cover the pan. This will create steam which will soften the vegetables.
After 1-2 minutes, give it a stir and now add the remaining ingredients- tomato paste, cumin powder, red chili flakes, salt, black pepper powder, soya sauce and 1/2 cup water.
Cover and let it cook for 1 minute.
The mixture should have a saucy look. If it has dried up, add the remaining 1/4 cup water.
Add the sausages to this mixture and give it a good stir to coat them with the sauce. Cover and reduce the heat to medium and cook for 1 minute more.
The juicy sausage mixture is ready.
To assemble a sandwich, just add the sausage mixture. It is so moist and flavorful, you don’t even need mayo!
