Singaporean Rice

Singaporean rice surprisingly does not originate from Singapore! It is a dish popular in Pakistan and India. One look a the dish and your jaws might drop open because it is a dish whose components don’t make any sense but tastes so good! It is an unusual winning combination!

It is a great dish to make when you are bored of eating your regular rice or have some leftover rice in the fridge that you have no idea how to use. Also if you are confused what to make because your family is a rice lover and spaghetti lover just go ahead and make this dish. It combines the two favorite carbs leaving everyone happy.

Singaporean Rice

This multiple layered dish has multiple layers as seen in the picture above:

– The bottom layer is boiled rice which is well seasoned.

– Above the rice are noodles which are also seasoned.

– The noodles are then covered with a saucy chicken layer. Depending on individual preference, the chicken can be substituted with prawns or fish. Vegetarians can replace meat with their favorite type of vegetables, mushrooms or paneer (cottage cheese).

– The final drizzle of spicy mayo is the show stopper.

– Some like to finish it off with deep fried garlic pieces for that extra crunch.

Can Singaporean Rice Be Prepared in Advance?

Yes! You can make all the components of the recipe one day in advance, and then heat everything separately. Layer right before serving. 

How To Store Leftovers?

Leftovers can be stored in the fridge for up to 5 days. The layers will get scrambled up but it is completely fine, it still tastes great. You can warm it up in the microwave or on the stovetop on medium heat.

Ingredients
  

Ingredients for Chicken

  • 3 chicken breasts thinly sliced
  • 1 tablespoon soya sauce
  • 1 tablespoon vinegar
  • 2 teaspoon black pepper powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2-3 tablespoon oil
  • 1/2 cup ketchup
  • 2 tablespoons chili garlic sauce
  • 1/2 cup water (additional 1/4 cup if needed)

Ingredients for Rice

  • 3 cups boiled and cooled rice
  • 2 tablespoon oil
  • 2 tablespoon vinegar
  • 1/2 teaspoon black pepper powder
  • 2 tablespoons liquid chicken flavoring (or 2 cube chicken bouillon)

Ingredients for Noodles

  • 1/2 package Noodles (450 gram)
  • 3 tablespoons oil
  • 1 tablespoon soya sauce
  • 1 teaspoon black pepper powder
  • 1 teaspoon liquid chicken flavoring (or 1/2 cube chicken bouillon)
  • 1 teaspoon vinegar
  • 1/2 cup veggies (optional) (green bell peppers, red bell peppers, shredded cabbage, chopped mushrooms)

Ingredients for Sauce

  • 1 cup mayonnaise
  • 4 tablespoons Sriracha sauce
  • 1/2 cup ketchup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper powder

Instructions
 

Step 1: Prepare the Chicken

  • In a bowl, place the thinly sliced chicken and marinate it with soya sauce, vinegar, black pepper powder, baking soda and salt. Mix very well and leave it for 10 minutes only.
  • Then in a large frying pan on medium-high heat, add oil and add in the marinated chicken pieces and give it a good stir until all the pieces turn white.
  • Cover and cook the chicken for 5-7 minutes stirring once or twice.
  • Add the ketchup, chili garlic sauce and the water and cover the frying pan. Allow it to cook for 10 minutes more.
  • The chicken should be saucy (not dry). If you notice it drying up, add 1/4 cup of hot water to it.
  • Once done, switch off heat and set aside.

Step 2: Seasoning the Boiled Rice

  • In a large non-stick pan or wok on medium-high heat, add oil, vinegar, soya sauce, black pepper powder and chicken seasoning,
  • Add the boiled rice and give it a quick stir to evenly distribute the flavors.
  • Stitch off the heat, cover and set aside.

Step 3: Preparing the Noodles

  • Boil the noodles as per the package instructions and drain.
  • Heat oil in a large pan on medium-high heat and add the soya sauce, vinegar, black pepper powder and the chicken flavoring and add the boiled noodles to it.
  • Mix well until all the noodles are coated.
  • Switch off heat and set aside.

Step 4: Preparing the Spicy Sauce

  • Mix together all the ingredients listed under ‘Sauce’- mayonnaise, Sriracha sauce, ketchup, salt and black pepper.

Step 5: Assemble

  • In a wide serving dish, layer the rice first, followed with the noodles on top, then the chicken and finally the spicy sauce.

Notes

All the ingredients/components can be prepared before hand but must be assembled at the time of serving.
