Easy Fluffy Pancakes

Ingredients
  

  • 1 1/3 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 2 tablespoons oil
  • 1/2 teaspoon vanilla extract
  • 1 cup buttermilk (take 1 cup warm milk+ 1 tablespoon vinegar. Mix and leave for 1 minute. It will curdle. Mix & use)
  • 1/4 cup milk (used if batter is too thick)

Instructions
 

  • In a large bowl, SIFT the dry ingredients - all purpose flour, baking powder, salt & sugar. Using a whisk, mix the dry ingredients well.
  • In another bowl, mix together the wet ingredients - egg, oil, vanilla extract & buttermilk.
  • Add the wet to the dry and mix using a whisk. Do not overmix. A few lumps are perfectly fine. The batter will be thick.
  • If you find the batter is too thick, add milk a few tablespoons at a time.
  • Set a nonstick pan/girdle on medium-high heat.
  • Once it is hot, slowly add about 1/4 cup batter. Start pouring from the middle, then continue pouring outwards slowly in a circular motion so that the batter spreads into perfect round shapes.
  • Cook until you see multiple bubbles appear on the surface of the batter.
  • Using a spatula, slide it under the pancakes and flip it.
  • Let the other side cook for about 2-3 minutes and then remove.
  • Continue until all the batter is used.
  • Serve with your favorite topping - honey, maple syrup, nutella, berry fruits, fruit compote, etc.

Notes

  • Preheat your nonstick pan or griddle on medium-high heat. Do not grease the pan with butter or oil! This will give it the characteristic brown base.
  • Use a 1/4 cup-sized measuring cup to pour your batter. This way you will get perfect, evenly sized pancakes. Start pouring from the middle, then continue pouring slowly in a circular motion so that the batter spreads into perfect round shapes.
  • Allow the pancakes to cook. Do not flip them too early. When bubbles start forming on top, they are ready to flip.
  • To flip perfectly, use a spatula and slide it completely underneath the pancake. Use your wrist to gently flip them instead of using your whole arm.
