In a large bowl, SIFT the dry ingredients - all purpose flour, baking powder, salt & sugar. Using a whisk, mix the dry ingredients well.
In another bowl, mix together the wet ingredients - egg, oil, vanilla extract & buttermilk.
Add the wet to the dry and mix using a whisk. Do not overmix. A few lumps are perfectly fine. The batter will be thick.
If you find the batter is too thick, add milk a few tablespoons at a time.
Set a nonstick pan/girdle on medium-high heat.
Once it is hot, slowly add about 1/4 cup batter. Start pouring from the middle, then continue pouring outwards slowly in a circular motion so that the batter spreads into perfect round shapes.
Cook until you see multiple bubbles appear on the surface of the batter.
Using a spatula, slide it under the pancakes and flip it.
Let the other side cook for about 2-3 minutes and then remove.
Continue until all the batter is used.
Serve with your favorite topping - honey, maple syrup, nutella, berry fruits, fruit compote, etc.
